Product and Process Technologist

Monitor and improve product and process standards relating to the Mortadella line, ensuring further development of the range, regulatory compliance, product quality and technological improvement.

Main activities

Production Area

  • Define, update and disseminate product and process technology standards
  • Train Production managers and verify the correct application of standards
  • Support the management of non-conformities and process deviations, collaborating with the relevant functions and Commercial Departments
  • Manage and monitor prescription changes

Research & Development Area

  • Coordinate and participate in product/process development and improvement projects.
  • Define, plan and follow development tests in compliance with the timing
  • Evaluate the results and, once approved, define and disseminate the new standards
  • Collaborate with Quality, Marketing, and Sales to develop new products and improve the offering in terms of recipes, shelf life, etc.

Quality Assurance Area

  • Apply mandatory and voluntary regulations relating to the products under your jurisdiction
  • Analyze analytical results, process KPIs and NCs for reviewing standards and control plans
  • Perform internal audits and support CCP validation activities and second and third party audits

Requirements

Essentials/Must have

  • Degree in Food Science Technology or similar studies
  • Experience in the world of cured meats/sausages within Research and Development and/or Production-Manufacturing and/or Quality Assurance
  • Knowledge of the transformation processes of cured meats and/or types of meat and ingredients
  • Knowledge of industry regulations (food safety, labelling, specifications)
  • Ability to analyze process data and analytical results


Preferential/Nice to have

  • Specific knowledge of the mortadella product
